Ingredients

  • 1.8 kg chicken (whole)

  • 236 ml lemon juice

  • 1 tablespoon of MERAKI extra virgin olive oil

  • Salt

  • Freshly ground black pepper

  • A few sprigs of fresh thyme

  • 1/2 fresh lemon

  • 60 ml MERAKI Thyme Honey, warmed to make it easier to spread

Instructions

  • Rub the chicken with about 2 teaspoons of salt.

  • Place the lemon juice and the whole chicken in a resealable plastic bag (e.g. a large freezer bag) and put the wrapped chicken in a bowl and let it rest in the refrigerator for 2 hours or overnight.

  • Take the chicken out of the refrigerator and remove it from the marinade bag.

  • Pat the chicken dry with kitchen paper.

  • Rub the chicken all over with MERAKI olive oil, salt, pepper, thyme sprigs and lemon wedges.

  • Fry at 205 °C (400 °F) for 20 minutes, then reduce the temperature to 175 °C (350 °F). Fry for another 45 minutes.

  • Fry for another 10 to 15 minutes at 175 °C (350 °F).
